Einkorn is an old grain. We've been calling it the "Grandmother Grain". It is often lumped together with Spelt, Emmer and Khorasan and categorized as one of the "Ancient Grains", but it is actually the mother to those grains (einkorn hybridized with a "goat grass" and spelt, emmer & Khorasan were the results). It is rich in riboflavin and carotenoids and produces a golden crumb that is dense and flavorful. We think its flavor is almost peanut buttery! The flax seeds provide rich, almost umami flavor as well as a nutrient boost, and a long wild cultured fermentation creates a very moist, barely sour crumb. It is a great source of resistant starch (ideal food for your gut microbiota). It has poor gluten forming qualities (it tends toward flat loaves if not put into a bread pan), and some folks that are sensitive to gluten seem to tolerate this grain with little difficulty.
Loaves weigh approximately 500 g.
Ingredients: water, 100% whole einkorn flour*, flax seeds*, sea salt, wild culture. (*organic)
