Chocolate Cake (Vegan!)

This is one of my favorite cakes!

I use to make this cake at home all of the time - but when I decided to ditch white flour, I stopped making it. Well - I figured out that it is pretty darn good (maybe better...) with local Soft White Seahawk Wheat! 

This cake is tender, moist and very chocolatey.  The icing is melted chocolate chips - I love it because it creates a shell that snaps like a chocolate bar. It is a nice contrast.

Ingredients: water, evaporated cane juice*, stone milled whole wheat flour*, canola oil*, cocoa (dutched)*, apple cider vinegar*, baking soda, vanilla extract, and sea salt.

Topping: chocolate chips* (*= organic)

4x6 (approximate), oven safe paper baking pan. 2-3 servings.
