Chocolate Cake (Vegan!)

This is one of my favorite cakes!

I use to make this cake at home all of the time - but when I decided to ditch white flour, I stopped making it. Well - I figured out that it is pretty darn good (maybe better...) with Farmer Marvin's Soft White Seahawk Wheat! 

This cake is tender, moist and very chocolatey.  The icing is melted chocolate chips - I love it because it creates a shell that snaps like a chocolate bar. It is a nice contrast.

Ingredients: water, evaporated cane juice*, stone milled whole wheat flour*, canola oil*, cocoa (dutched)*, apple cider vinegar*, baking soda, vanilla extract, and sea salt.

Topping: chocolate chips* (*= organic)

4x6 (approximate), oven safe paper baking pan. 2-3 servings.
