I swoon when I lift the lid off the fresh milled bin of "Gazelle" rye...it reminds me of molasses. Most people who don't like rye, probably don't like caraway seeds. Many America rye breads have caraway in them and one either loves it or hates it! I like to encourage the haters to try out this rye - it could change your mind on rye forever.
Rye also is a fabulous source of fiber - it tends to have a bit higher percentage of fiber than other whole grains.
Ryes are lower in gluten, and therefore 100% whole rye breads will need to be baked in a bread pan if you don't want a flat loaf. We find that our fresh milled whole grain rye makes great cookies (especially when paired with chocolate chips, cocoa powder or cacao nibs). Try it with your favorite brownie recipe. Replace 10% of your white flour with "Gazelle" in your pancake, bread or quick bread recipes. It will add nuanced flavor and aroma. You can keep increasing the percentage to find your sweet spot.
